Dr. de Mello's research focuses on positively impact meat industry operations, production costs, meat quality attributes, and animal welfare.
Current research topics include pre and post-harvest food safety interventions, effects of feeding different sources of energy on meat composition, shelf life stability, added value-fresh cuts, and effects of physiologic parameters on muscle-to-meat transformation.
